Thanksgiving Breakfast Idea: Turkey Pancakes

While adults will often wait for the big meal to be prepared on Thanksgiving and may even hold off on eating until then, children will need something to eat when they wake up. So are you looking for a quick and easy Thanksgiving breakfast idea that we leave your kids with a smile on their faces? Look no further than these yummy turkey pancakes! The cool thing about these turkey pancakes can be made as a vegan option (check out my vegan applesauce muffins for another vegan treat) or a non-vegan option (my blueberry muffins are also delicious). They’re great because they provide a hearty breakfast option for your family that will hopefully keep them out of the kitchen as you prepare for the main dishes for Thanksgiving.

Ingredients for Turkey Pancakes

1 1/2 cups of all-purpose flour
3 tbs of sugar
3 tsp of baking powder
3/4 tsp of salt
1 tsp of cinnamon
1 1/2 cups of whole milk (soy milk or almond milk can be used as a substitute)
1 large egg (1/4 cup of applesauce can be used as a substitute)
1 1/2 tbs of vegetable oil
3 tbs of butter (melted)
1 apple sliced (for the turkey feathers and legs)
2 chocolate chips (or raisins) for the eyes
Preparation
- Whisk all dry ingredients (flour, sugar, baking powder, salt, and cinnamon) in one mixing bowl.
- Combine the wet ingredients (milk, egg, vegetable oil, and butter) in a second bowl.
- Add the wet mixture to the dry mixture and mix them.
- Pour your mixture into a pan or skillet over medium heat & make a large round pancake.
- Pour your mixture into a pan or skillet over medium heat and make a smaller circle pancake.
- Place the smaller pancake on top of the larger pancake.
- Cut the apple and use the sliced to make the feathers, legs, and beak. You can also use bacon or eggs to make the feathers.
- Place the chocolate chips or raisins in the position for the eyes.
- Serve to your little one and watch them smile!
