Tasty Vegan Applesauce Muffins

These tasty vegan applesauce muffins are everything you didn’t know you needed. This is a breakfast staple that you can feel good about serving your family. These tasty vegan applesauce muffins are a fan favorite in my home. My husband and children LOVE THEM. I mean they really LOVE THEM, they beg me to make them every week. I don’t mind making them because they meet my personal cooking criteria of being quick, easy, and tasty. I really cannot emphasize enough how easy these are to make. My 4-year old daughter can make these, and my world-famous yummy blueberry muffins in her sleep.

These muffins are not only limited to breakfast. I serve them as an afternoon snack when we get home from school and work. I sometimes pack them as a special treat in their lunchboxes. I catch my husband sneaking and eating them in the middle of the night.

Vegan Applesauce Muffin Ingredients (Recipe makes 12 muffins)

2 cups of all-purpose flour

1 cup of granulated sugar

1 tsp of baking soda

½ tsp of salt

1 tsp of cinnamon

½ tsp of nutmeg

½ cup of vegetable oil

1 cup of Mott’s Cinnamon Applesauce (I like my muffins to have a strong cinnamon taste. To lessen this, use regular Mott’s Applesauce)

1 tbsp of pure vanilla extract (none of that imitation stuff)

  • Optional addition – crushed walnuts or raisins

Instructions

Preheat oven to 350 degrees, and line a muffin tin. In my favorite mixing bowl, I combine the ingredients. Stir then until just evenly mixed. I use an ice cream scooper to fill each liner. I try to use one ice cream scoop per muffin liner. If there is some muffin mix leftover, I add it to the liners as evenly as possible. Place the muffins on the middle rack in the oven, baking for 20 minutes or until the muffins have domed. Insert a toothpick and check to see if it comes out clean. When they are ready, it should come out of the muffin, mostly clean. Let them cool off before eating. Leftover muffins can be frozen.

Vegan Applesauce Muffin Substitutions

My husband is health-conscientious. If I am making a batch just for him, I will substitute the cinnamon applesauce for unsweetened applesauce.

  1. I tried a recipe like this! But it used cake mix too. Using the ice scoop is a great idea!

        The cake mix is a great shortcut but if you want the recipe to be strictly vegan, check the ingredients to see if the mix has milk or egg.

    Came out simply perfect! I used slightly less oil, slightly more apple sauce, and some baking powder too. Took 25 min to bake at 355F. Seriously, the texture is fluffy, tender, soft. I also did a sugar/cinnamon coat with melted coconut butter. This will be my go-to recipe and the only reason I found it, is because I was out of eggs, lol. Thanks so much, Tiffany! 😍

    I don’t often enjoy my sons dairy/egg free recipes, he has allergy to both. I ate half the batch and he ate the other, at only 16 months old! They taste like Christmas!

    Hey, I made them with oat flour since my little one is allergic to wheat, I added a tsp of baking powder also. I substituted sugar for 1/2 coconut sugar and 1/2 monk fruit sugar they came out so wonderful and not dry at all! Highly recommend for those who have wheat/egg/dairy allergies! Everyone who ate them loves them!
